This year, we've crafted a Paloma cocktail using Mezcal - the cousin of Tequila. While tequila is only made from one type of blue agave, Mezcal can be made from any agave plant. The smokiness comes from roasting the plants over an open fire.
It combines tequila with freshly squeezed grapefruit juice for a crisp and bubbly cocktail that will surely be a gamechanger. It's healthy, easy to make, and the fizzy, sweet tequila drink will be perfect for hot summer days that are just around the corner. Let's dive in!

INGREDIENTS:
2 oz Mezcal or sub tequila
2 oz Pink Grapefruit juice
1 oz Chamomile Mint simple syrup
Club soda
STEPS:
In a cocktail shaker filled with ice, combine the mezcal, grapefruit juice, and simple syrup. Shake for about 15 seconds.
Pour into the salt-rimmed glass and top off with a splash of club soda and a few ice cubes. Garnish with mint and grapefruit wedge.
Chamomile Mint Simple Syrup - Bring filtered water to a boil and steep 4 tablespoons of Chamomile Mint Rooibos tea for 8 minutes. Then stir in one cup of honey while boiling, on medium-high, until honey dissolves. Cool to room temperature. Store in an airtight container in a refrigerator for up to 2 weeks.
